Self-Contained Mobile Units-A self contained mobile unit is not needed to operate out of an approved commissary as long as the unit has:

Established potable water tanks and wastewater holding tanks; Hand washing sinks, ware washing facilities, and utility sink; and Suitable storage facilities on the unit for all food, equipment, utensils, including single service items and supplies used in the activity.
